You may have seen me mention before that I am trying to eat healthier this summer, I have been eating a lot of salads for lunch recently as they are quick and easy to make and also light to eat which don't make me feel bloated. I had been taking the lazy option and buying a salad or pasta salad from the supermarket on the way to work but I always find that there's barely any dressing, not enough meat, tuna or prawns and they just don't taste as nice as homemade ones! So, I decided to try and create my own slightly healthier version and have been making lots of prawn pasta salads, potato salad and more recently broccoli pasta salad. This is perfect for summer as it's nice and light, or even for a picnic.
Broccoli Pasta Salad - Serves 3-4 (more if you are serving as a light lunch)
Pasta of your choice
1 Large Broccoli
2 Cloves Minced Garlic
3 Tblsp of Mayonnaise
1 Tblsp Olive Oil
Salt & Pepper
Firstly chop up the broccoli into small bite size pieces, and cook slightly in a pan until softened. In a bowl combine the broccoli with garlic and onion if you wish.
Cook the pasta and drain immediately, then add the pasta into the bowl with the broccoli. Mix until all stored in.
Add in the mayo, oil and salt & pepper to your liking, you may wish to add some poppy or sesame seeds. Stir the dressing and add the grated cheese into the pasta bowl. The heat of the pasta will melt the cheese.
Keep in the fridge for a few hours to cool and serve.
