I have been really enjoying getting back into cooking and eating healthier these past few weeks (more on that soon) and one of my favourite meals this week has been this Prawn, Rocket & Olive Pizza I decided to make one night which was de-lic-ious! I'm not a huge pizza lover, never have been but I do love a homemade rustic pizza! I also love experimenting with my toppings as lets face it the same pizza can get pretty boring after a while. This would be the perfect summer pizza, nice and light yet very appetising.
- 1 cup of King prawns
- 1 handful of sliced Black Olives
- A handful of fresh Rocket
- 1 cup of fresh cherry tomatoes
- 1 cup of torn mozzarella
- Kosher Salt & Black Pepper
- Olive Oil
First of all make your pizza dough any way you prefer, I like to have mine pretty thin so I roll it out a lot. Stretch it out into a large circle or rectangle. Brush it with olive oil, and sprinkle with salt and pepper and garlic if you wish.
Pat your prawns dry with a paper towel and season with salt and pepper. Preheat a pan on medium heat with olive oil and cook the prawns for one minute on each side. Remove form the pan and set aside until needed.
Scatter the chopped tomatoes ( with the seeds and pulp removed), mozzarella and olives all over the pizza base. Place the prawns all over the toppings and cook in the over until the crust is golden-brown and the cheese is melted and bubbly. If you have any water resider on top just use a paper towel to blot it up.
Allow the pizza to cool for a few minutes and sprinkle with rocket and cut into slices to serve.
I have also made this before with basil instead of the rocket and olives and it works well as a Caprese pizza.
