If you follow me on Instagram it's no secret that I have a huge thing for Panini's at the moment. Ever since I bought my Panini Press a few months back I've been having them religiously! I even went one month having them every day ha ha! The thing is, I tend to only have the same panini... bacon, brie and cranberry and as much as I love it and could eat them every day it's good to try other fillings once in a while. I recently decided to make a Chicken, Mozzarella and Pesto Panini as I had run out of cranberry and had the other ingredients in the fridge. I've never really tried pesto before but it was surprisingly really good! In fact, I had another one afterwards it was that good!
Chicken breast ready cooked slices
1 cup of shredded mozzarella
3 tblsp of Pesto
Panini or ciabatta bread
Spread the pesto on one side of the panini. Then layer it with chicken slices, your shredded mozzarella and you could also add in some roasted peppers or sliced tomatoes if you wish.
Preheat your grill pan or panini press until hot and place your panini's in the press. Pull down the lid or weight it down with another pan if using a pan. Cook until the outsides are golden for about 5 minutes.
Cut in half and serve with crisps or salad.
