Following on from Amelia's birthday, today I am sharing with you a quick and easy cake batter pancake recipe perfect for birthday's or any occasion for that matter! I made these for breakfast on Amelia's birthday with a little candle in them and they went down a treat! After all who wouldn't want pancakes for breakfast on their birthday? As I didn't make her a cake this year I thought I would make little sweet treats instead. I will definitely be making these every now and again
(everyday) as they are soooooo good!
For the Pancakes:
1 1/4 cups all purpose flour
1 cup cake mix
3/4 teaspoon baking powder
1 Tablespoon sugar
pinch of salt
1-2 cups milk
2 large eggs
1 teaspoon vanilla extract
Assorted sprinkles (I used confetti sprinkles)
For the Glaze:
1 cup icing sugar
1 Tablespoon milk
1/2 teaspoon vanilla extract
1. Mix all of your dry ingredients in a bowl ( Flour, cake mix, baking powder, sugar and salt)
2. Add 1 cup of milk, the eggs and vanilla extract and stir until smooth. You can add additional milk if needed until you have the consistency of pancake batter. If you want your pancakes to take a lot like cake then add more cake mix.
3. Preheat a pan on low to medium heat and fold in your desired amount of sprinkles into the batter. Pour 2-3 tablespoons of the batter into the pan and cook until bubbles start to form on top then flip them over and cook for about another 40-60 seconds or until brown.
4. Now make up your glaze which you will need to mix icing sugar, butter, vanilla and milk until glaze forms. You may need to add more milk for a drizzled consistency. Mix into a glaze and drizzle on pancakes.
