This week I had a real taste for a nice salmon pate, I've never made one before but thought i'd give it a go and it turned out rather well. This quick and easy dish only takes five minutes to prepare and is a great easy starter dish for having guests round or even a light lunch. Amelia enjoyed helping me eat it too and was dipping the breadsticks in asking for more. I used chives in mine but you could also use dill which will be just as nice. It's also a good idea to make it an hour before you would like to serve it and leave it to set in the fridge.
150g smoked salmon
200g tub of soft cheese
1 tbsp crème fraîche
juice half a lemon
small bunch dill or chives, chopped
breadsticks or melba toast to serve
1. Firstly chop up the salmon into small pieces. Spoon the soft cheese, creme fraiche, and lemon juice into a food processor or blender, season with black pepper and blitz to your liking. Now add in the smoked salmon and pulse a few times, I tend to leave it like this as I want it to be a chunky pate however if you want the pate to be smooth and pink then blitz it some more.
2. Stir the chopped chives into the pate and spoon into a bowl and serve with breadsticks as a dip, melba toast or warm toast depending of if you are serving as a starter.
