Prawn Noodle Soup Recipe


This is a cheap and easy recipe to cook especially if you have the majority of the ingredients in the cupboard already. It's very versatile and can also be made with meat or vegetables instead if you don't like fish. I love Chinese and Thai food so this week I thought i'd give it a go by making my own Prawn noodle soup which turned out pretty well if I don't say so myself! I have also made a big batch up so I can have some for lunch tomorrow. 

Serves 2
Prep time: 10 minutes
Cooking time: 10 minutes

Ingredients 
500ml chicken or fish stock
1 finely chopped ginger root
1 tsp chilli flakes
1 tbsp oyster sauce
1 tbsp sweet chilli sauce
1 tbsp dark soy sauce
1 red chilli chopped for garnish
1/2 lime juice
Bunch of spring onions thinly sliced
Lemon grass stalks cut thinly
1 pack of rice noodles 
Whole prawns
Salt and pepper (optional)
Coriander for garnish

Method

1. I began by making my stock which included 500ml of cold water along with chicken stock. I put this into a saucepan and placed on the hob. 

2. Next add the ingredients apart from the noodles, spring onion and prawns. Taste it while adding the ingredients to see if its too hot or needs more spices. Add accordingly and bring to the boil then allow to shimmer.

3. Add the spring onion, noodles and prawns and allow to cook for a further 3-5 minutes until the prawns and noodles are cooked through. Taste again to check the flavour is still there and if you need add more ginger, chilli or sauces. 

4. Serve in a bowl and sprinkle with fresh sliced red chilli and coriander.
