Prawn & Potato Stir Fry

Hey everyone! I have always been a huge fan of noodles, in fact I think I could actually live off them! Not kidding! I am always experimenting with noodle dishes and seeing what new dish I can come up with. At the moment I am loving rice noodles as they are seriously yummy and easy to cook! Here's what I came up with the other day and since it turned out pretty good I thought I'd share the recipe with you. Here we go.


Ingredients:

1 Potato 
1 Large Onion
Green Pepper
Spring onion
1 Bowl of Prawns
Brocoli (optional)
Green Chilli
Olive Oil
Soy sauce 
Rice noodles

First of all you need to heat up your wok with olive oil and add some chilli flakes. Then slice up a large potato and fry it off on a medium heat for 5-10 minutes until soft occasionally stirring so it doesn't stick to the bottom of the pan. 

Finely cut up your green pepper into thin slices, spring onion, onion and chilli. Add all of these ingredients to your wok and heat through for a further 5 minutes. 

Here you can add other vegetables such as broccoli and carrots if you wish as well as your prawns. I use large peeled prawns for this as they are more flavoured. Heat this for another 5 minutes stirring again. 

Now add your rice noodles, depending on how many people you are cooking for a bag should serve two people. Toss these in the wok and stir to evenly spread out all of the ingredients. I also add in soy sauce at this time too, to add flavour to the dish.

  33. Sounds yummy apart from prawns, I don't eat them. We eat alot of stir fry, ours tend to be sweet chilli veggie ones. Yum!
