Today I was craving pancakes for breakfast so badly unfortunately I didn't have any of my favourite blueberry pancakes left so I decided to make more own. I've been thinking about making some Halloween inspired treats over the next couple of weeks so it was the perfect timing to experiment. Luckily I had all the ingredients in the cupboard ready so I got to work and came up with this. I'm not a huge fan or Pumpkin if I'm honest but my oh my, these were yummy!
1 1/4 cups all-purpose flour
1/4 cup sugar
1 egg, lightly beaten
1 1/2 teaspoons of baking powder
1 teaspoon of cinnamon
3/4 teaspoon of salt
1/2 cup of canned pumpkin
1/2 cups buttermilk
2 tablespoons unsalted butter, melted
1 teaspoon of vanilla
Chocolate chips & M&M's (optional)
First of all in a large mixing bowl you will need to whisk the flour, baking poweder, sugar, cinnamon and salt. Then in a seperabte bowl combine the egg, pumpkin, butter, buttermilk and vanilla. Stir all of these ingredients into the mixing bowl until combined, just be careful that you don't over-mix the ingredients.
Next heat a non-stick pan to a medium heat and lightly coat with baking spray. Cook the pancakes until bubbles cover the top and the bottom and they are a light golden brown colour. Now is the time to sprinkle any chocolate chips on top and flip over. Continue to cook until the pancake is cooked through.
I like to make 3-4 of these per serving, stack them up and serve with warm maple syrup. You can then add yellow and orange M&M's for decoration.
Of course you don't have to make the pancakes yourself, if you don't have time you could simply buy some chocolate chip pancakes from the supermarket of course they will be minus the pumpkin but you could still make a nice Halloween treat for the little ones.
