Halloween Pumpkin Chocolate Cupcakes

Halloween is only a few days away, and we have been eating lots of sweets and Halloween inspired yummy treats. This week I made some pumkin chocolate cupcakes which of course were all eaten right away! I've never really been a fan of pumpkin but these are soooo good!

Ingredients

1 chocolate cake mix
1/2 canned pumpkin
Halloween sprinkles
Icing

I cheated and used a cake mix, I didn't have all the ingredients in to make it from scratch and I really had a craving for some cupcakes that day I decided to use a cake mix box. I lined some cupcake cases in a cupcake tray and added in the pumpkin from the can into the mixing bowl with the cake mix and mixed thoroughly and baked in the oven for around 20 minutes.

I did however make my own icing, you can find some great recipes online for making your own if you're not sure how to yourself. To finish I added some Halloween sprinkles and candy corn for decoration.

Surprisingly they turned out amazing and even Amelia had a nibble on one and enjoyed it.

Cupcake anyone?

  6. I love halloween. These are perfect and simple cup cakes with a brilliant centrepiece.
May I be allowed to say that if you want pumpkin ready for cup cakes and don't want to buy it in a can (over here, it's usually made by Libby's aka Nestle - which most boycott!), then you can use your very own pumpkins, scoop out the flesh and if you steam and drain, it's really yummy and the real thing :)
