Recipe: Spicy Prawn Fried Rice


I could seriously live off Chinese food for ever. Give me a chicken and black bean or a chicken vermicelli any day of the week and I will demolish it. It's definitely a weakness of mine. Which is why I have been trying to cut back on the takeaways and cook my own from scratch whether that be a stir fry or fried rice dish. The other day I made a prawn fried rice dish which is much healthier than any takeaway or supermarket packet. 

Ingredients
Half a bag of Prawns
Spring onion Chopped
1 large onion
Chili (Green, red or both)
Carrots (optional)
Brocoli (optional)
Basmati Rice 
Soy sauce
Ginger (optional)
3 eggs


First of all i fry off the onion, spring onion, ginger and chilli in a wok for 5 minutes, until the onions are soft. Next i add in 2 eggs as well as the sliced carrots and broccoli and cook through. Next i add in the prawns and stir then add in the last egg. I now add a bit of soy sauce and slowly pour in the cooked rice mixing as i go along. I then add more soy sauce and cook through for another 10 minutes until ready. I find it best doing it this way, of course any way you do it i'm sure it would all turn out perfect! It's such a quick and easy meal to make.

  3. My local Chinese does a fab chicken fried rice and even thou I'm not the best cook - I think even I could have a go at making this. (I'd change the prawns to chicken thou - I watched a documentary on how prawns are farmed - totally put me off - pity I used to love prawns pil pil)
