Now I don't know about you, but being a busy mum like myself it can become a chore to eat during the day time. Most of the time after I get Amelia down for her afternoon nap I sit down to blog, and get carried away, come 3pm I realise I haven't eaten anything yet! Also as I'm still breastfeeding I get super hungry all the time. I have become really bad at this lately which is why I have decided to put together this little food diary of quick and easy lunch/snack ideas for busy mums. I am trying to eat healthy in preparation for holiday in November which means no more crisps or pot noodles for lunch!
Goats Cheese, Caramelised Onions, Rocket with salad and toasted bread roll. Time: 5 Minutes
I have been addicted to this the past week and can't get enough of it. I know goats cheese isn't the healthiest but it's better than chips!
Parma Ham, Melon and Grape Salad. Preparation Time: 2 minutes
Cracker bread with Boursin cheese and cucumber. I also have this with melba toast quite often.
Prawn Stir fry - With rice noodles, bean sprouts, onions, cabbage, chilli, ginger and oyster sauce
Preparation time: 10 minutes Cooking time: 10 minutes
Jacket Potato with Chicken & Bacon. Cooking time: 45mins - 1 hour in oven
I like to change up what fillings I have with Jacket Potatoes, I usually have prawns or tuna and mayo.
Bread Sticks & Humous - This has become my new addiction for snacking on during the day when I'm feeling peckish also Amelia helps me eat a few too! You can find many different dips in the supermarket, Waitrose and M&S have a great selection too.
