If you're a regular reader then you would have probably guessed I don't spend much time in the kitchen. However recently I've been more into cooking meals instead of the usual microwave ready meal. So this today I decided to make this delicious chicken stir fry. It's such a quick and simple meal especially for one!
Chicken 1 or 2 breasts (or more if required)
Garlic chopped finely
Ginger chopped finely
Step by step
1. Chop up your chicken breast into small pieces add a table spoon of honey and soy sauce, add the ginger and garlic and leave to marinate for a few hours in the fridge (or overnight).
2. Prep all your vegetable ready and heat your wok until the oil is ready. Drain the chicken from the marinate and keep it for later. Cook chicken in the wok until nearly cooked or golden brown on medium heat and add your vegetables and more ginger and garlic if required and stir fry. Tossing occasionally, add the spring onion and stir fry for another 2 minutes.
3. Add the remaining marinate and top with more honey and sauce sauce depending on taste.
4. Serve on a bed of rice or noodles and garnish with spring onion or coriander.
There you go a easy recipe that you'll want to repeat again the following night!
